Ragù Sauce

Here we go with the first recipe.....I have decided to make ragù sauce today. It's easy and cheap to make and keeps in the fridge for a few days! Always a great sauce for your pasta.

Ingredients:

- 500g mince meat - pork & beef.
- Carrots.
- Onions.
- Celery.
- Concentrated tomato pure.
- Bottle of tomato passata or chunks.
- Salt to season.

Dice 2 carrots,2 sticks of celery and 1 onion into small cubes, place 2 tablespoons of olive oil in a non stick pan and cook until soft.Add the mincemeat and cook for 3 minutes before adding the passata, and small quantity of pure. Salt to taste.Cook on a low heat for about one hour.
Garlic and mushrooms are an optional to add after the tomato passata or chunks.
When cool put in an air tight container and keep in fridge for 3 days.
The sauce can be used for pasta or lovely over jacket potatoes or rice!

A recommended wine for this dish are

  • Chianti Colline Pisane.
  • Chianti Colli Aretini.
  • Chianti Colle Fiorentini.
  • Chianti Colli Senesi.
