Potatoe & Leek Omelette...Frittata di Patata & Porri.


  • 6 eggs.
  • 3 medium potatoes.
  • 1 leek.
  • 2 tablespoon of grated parmesan cheese or other salted hard cheese.
  • 2 tablespoon of olive oil.
Peel the potatoes and slice thinly. Wash and take the outer layers off the leek then slice thinly.
Break the eggs into a bowl and beat with a fork until fluffy, add salt & pepper to taste, then add the grated cheese.
Drizzle the olive oil into a non stick frying pan and start cooking the potatoes, after a few minutes add the leeks.
Cook on a low to medium heat, turning the sliced potatoes so they cook evenly.This may take 5 mins.
Add the beaten egg mixture to the frying pan.The mixture should cover the potatoes & leeks evenly.
Cover the pan & cook on a low heat for 10 mins. every now and then move the pan to make sure nothing is sticking.
Flip the 'frittata' over & cook for another 10 mins.
Slide onto a serving plate and cut into pieces.


                                      Serve with salad or vegetables. Can be eaten hot or cold.
